April 18 is this year’s deadline to file taxes or apply for an extension.

Usually, when April 15 falls on a weekend the tax deadline is moved to the following Monday. April 15 falls on a Friday this year but another event, Emancipation Day, is pushing back the deadline three more days.

Emancipation Day – set aside to commemorate the signing of the Emancipation Act by President Abraham Lincoln – is celebrated in Washington, D.C. It is observed on April 16, which just so happens to fall on Saturday this year. Emancipation Day is a legal holiday in D.C. with federal employees, including those at the IRS, off the job. Since this year’s holiday is on a Saturday, it will be observed on the closest weekday, which falls on April 15, moving the tax deadline to the next Monday on April 18.

Love that Tomato

April 6th has been designated Fresh Tomato Day. Tomatoes epitomize summer and are easy to grow in your own garden.

 The best place to store tomatoes is at room temperature – never in the refrigerator as the cold temperature destroys the tomato flavor and makes them mealy. A ripe tomato has bright, shiny skin and yields to the touch. Place them stem side up as the top part is the softest and tends to bruise easily. Store them out of direct sunlight and be sure to use within 4-5 days of picking or purchasing.

Tomatoes are an extremely healthy fruit as they are great sources of vitamins A and C, potassium, fiber, and lycopene. Lycopene is responsible for this fruit’s rich red color and tomatoes have the highest concentration of any other fruit or vegetable.
